Easy Fruit Cake ~just four ingredients

I shared this recipe over five years ago on my other blog

I remembered about this fruit cake after reading Annabel's posts on Christmas gifts this week. This really is a great recipe,  so simple with not many ingredients.

FRUIT CAKE

750gms mixed fruit

2 cups of orange juice

Mix together and leave overnight.

Add 2 cups SR flour and 1 tspn mixed spice.

Mix well and bake for 1-1.5 hours in a moderate oven.

Enjoy!

* Edited to add: This cake can be made using different juices, chocolate milk, cold tea, cold milk coffee.  Go here for the recipe.

  3. This is what my Nan used to call white fruitcake (as opposed to the dark colour of boiled fruitcake). She would serve white fruitcake with a small glass of sherry to visitors who arrived after luncheon.

  4. Oh Tania, I am so going to make some of these, a break from dairy and eggs in a cake will make me feel so virtuous.

    1. Hope the cake works out for you Pam.

We don't dairy here anymore and feel fantastic! We use almond and soy milk these days :)

  5. I tried this when you posted on your other blog.i must have done something wrong as it really wasn't very nice. I'm going to give it another go and see if I can't make it taste better this time around.

  6. Really Jane? I am so sorry to hear that.

I don't know what could have gone wrong. Maybe use a different kind of juice, or cold tea? This recipe can be made using 600ml of chocolate milk too. https://www.stayathomemum.com.au/recipes/three-ingredient-fruit-cake/

I will be making this again soon so I hope it turns out as good as the first time I made it. I have not made this cake again since I posted it lol!

  9. Dear Tania,

I have some [American... rolling eyes] questions, please:
-- What would the dried fruit mixture be? Or are these fresh?
--Can the orange juice be from a carton? With pulp or without?
    --SR = Self-Rising?
--What would be the spices in "mixed spice?"
--Finally, at what degrees F/C do you bake yours, "in a moderate oven"?

    Thanks for your help!

    *hugs*

    1. Hi Kelley,

We can buy a dried fruit medley here, it has many dried fruit in it, like sultanas, raisins, currants and orange rind.

Yes a carton of orange juice would work fine, with or without pulp would be okay.

      SR = self rising flour

      Moderate oven temp of 350F.

Any spice that can be used in cake, cinnamon, nutmeg, all spice, mace, cloves, coriander and ginger. Recipe here; https://www.bbcgoodfood.com/recipes/181605/mixed-spice

Have a lovely day and thanks for dropping by xx
