I shared this recipe over five years ago on my other blog.
I remembered about this fruit cake after reading Annabel's posts on Christmas gifts this week. This really is a great recipe, so simple with not many ingredients.
FRUIT CAKE
750gms mixed fruit
2 cups of orange juice
Mix together and leave overnight.
Add 2 cups SR flour and 1 tspn mixed spice.
Mix well and bake for 1-1.5 hours in a moderate oven.
Enjoy!

DeleteI've got this recipe to and just soaking my fruit, ive never made a christmas cake before but have to try this recipe, im using small tins to make mine in as part of gifts, so fingers crossed they look even half gorgeous as yours xoxo

This is what my Nan used to call white fruitcake (as opposed to the dark colour of boiled fruitcake). She would serve white fruitcake with a small glass of sherry to visitors who arrived after luncheon.

Oh Tania, I am so going to make some of these, a break from dairy and eggs in a cake will make me feel so virtuous.

I tried this when you posted on your other blog.i must have done something wrong as it really wasn't very nice. I'm going to give it another go and see if I can't make it taste better this time around.

I will be making this again soon so I hope it turns out as good as the first time I made it. I have not made this cake again since I posted it lol!

--Can the orange juice be from a carton? With pulp or without?

DeleteWe can buy a dried fruit medley here, it has many dried fruit in it, like sultanas, raisins,currants and orange rind.
Yes a carton of orange juice would work fine, with or without pulp would be okay.
SR = self rising flour
Moderate oven temp of 350F.
